Homemade Peach Cobbler/Pie

Today I made homemade Peach Cobbler/ Pie, from scratch and filled with perfectly ripened peaches and plums picked from Smolak Farms in North Andover, MA.!  It was incredibly yummy and easier to make than I originally thought. For the base or pie crust we used this recipe, that was of course after deciding to make a crumb pie and not a lattice top,

Homemade Pie Crust (with flour)
1 1/2 cups all-purpose flour
1/4 teaspoon fine salt
1 teaspoon granulated sugar
8 tablespoons cold unsalted butter (1 stick), cut into small pieces
4 to 5 tablespoons ice water

For the actual pie itself, we made a cinnamon and brown sugar mix to coat the sliced peaches and plums in.

After waiting an hour for the pie crust to harden we poured the cinnamon-sugar fruity mix onto the crust and spread on our crumb top mix, which consists of…

Pie Top Crumb Top:
1 cup all purpose flour
1/2 cup sugar
1/4 cup (packed) golden brown sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes

We placed the pie in the oven for about an hour and let it cool for even longer, but the wait was worth it, so yummy, and I have picture proof.
